Salty and aromatic. Used for seasoning rather than colour. In Western supermarkets, this is often labelled simply as “soy sauce”. -
Dark soy sauce(老抽) — Situational
Thicker, darker, and lightly sweet. Used mainly to enhance colour and depth, not saltiness. If you run out, most dishes will still work — they will just look lighter.
Note on “soy sauce” labels
